Originally from Corfu, an Ionian island with a great culinary tradition, Koskinas cleverly marries his childhood foodie memories with the flavours he’s enjoyed during his worldwide travels. From France, Canada, passing though England, Scotland, Venezuela, the USA and Spain, for him, it’s the influences of these trips and encounters which make his cuisine special rather than the recipes.
